I love this chicken. I always forget about this jewel of a recipe, and then when I finally remember it I make it several times. No complaints from the fam, they love it too.
Ingredients
4 boneless, skinless chicken breasts
4-5 Tbsp. butter, melted
1/2 cup garlic herb breadcrumbs
1/2 cup finely shredded parmesan cheese
1/2 tsp. garlic powder
1/2 tsp. onion powder
salt and pepper to season
Directions
Preheat oven to 350F. Grease a 9x13 bake dish. Melt the butter in a bowl large enough to hold a chicken breast.
Mix bread crumbs, parmesan cheese, garlic powder, onion powder in a shallow dish, like a pie pan.
Place chicken breasts in a gallon bag, seal, and beat with a meat mallet until chicken is all an even thickness, about 1 inch thick, or thinner. Season the chicken with salt and pepper on both sides, then dip in the melted butter, also on both sides.
Next dip the chicken in the breadcrumb mix, well coated. Place in the 9x13 and bake for 35 min., then broil on low for a few minutes until desired brownness.
*I like to toss broccoli in the remaining butter and breadcrumbs, with about 1 Tbsp. olive oil as well and bake it for 30 minutes, for an easy side dish!
